While Culver City Salads and Loving Hut Express are taking care of vegan street foodies in Vancouver, another vegan food cart has begun serving customers in municipalities to the east. The Gypsy Trunk opened on July 28 at the We Heart Langley festival.
Owned by Langley entrepreneur Jen Hiltz, the Gypsy Trunk cooks up two kinds of burritos. The Italian sausage and brown rice burrito is made with Field Roast, and the black bean and brown rice burrito is gluten-free. Both burritos are soy-free and include pico de gallo, guacamole, and Daiya mozzarella cheese on a brown rice tortilla. Snacks and drinks are also on offer, with soy milk and coconut sugar available for coffee and tea.
The Gypsy Trunk is scheduled to attend several more events this summer, including the Jam in Jubilee in Abbotsford (August 15), Party in the Park in Chilliwack (August 16 and 23), Quayside Boardwalk Festival and Sale in New Westminster (August 17), and Langley Community Farmers Market at Kwantlen Polytechnic University (August 21 and 28).
Hiltz told Veg Coast by email that she hopes to find a regular location for the colder months and then set up at festivals and farmers markets again next summer. Her goals include expanding her food cart’s menu, catering special events, and possibly opening a restaurant one day.
